Fragrant Hainan Chicken Rice
Fragrant Hainan Chicken Rice is a classic dish from Hainan Cuisine, known for its flavorful poached chicken and fragrant rice. This dish is a staple in many Southeast Asian countries and is loved for its simplicity and delicious taste.
Ingredients
- 1 whole chicken, about 3 lbs
- 2 cups jasmine rice
- 4 cloves garlic, minced
- 1 thumb-sized ginger, sliced
- 2 stalks green onions, chopped
- 1 cucumber, sliced
- 1 tomato, sliced
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- Salt
- Pepper
Instructions
- Wash the chicken and pat it dry. Rub salt on the inside and outside of the chicken.
- In a large pot, add enough water to submerge the chicken. Add ginger slices and bring to a boil.
- Gently lower the chicken into the pot and let it simmer for 30-40 minutes, or until cooked through.
- Remove the chicken and place it in an ice bath to stop the cooking process. Then, pat it dry and rub sesame oil all over the skin.
- Rinse the rice and cook it in the chicken broth with minced garlic until fluffy.
- While the rice is cooking, prepare the dipping sauce by mixing soy sauce, sesame oil, and chopped green onions.
- Once everything is ready, carve the chicken and serve it with the fragrant rice, sliced cucumber, and tomato. Enjoy with the dipping sauce!
