Fragrant Hainan Chicken Rice

Ingredients

  • 1 whole chicken, about 3 lbs
  • 2 cups jasmine rice
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 stalks green onions, chopped
  • 1 cucumber, sliced
  • 1 tomato, sliced
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • Salt
  • Pepper

Instructions

  1. Wash the chicken and pat it dry. Rub salt on the inside and outside of the chicken.
  2. In a large pot, add enough water to submerge the chicken. Add ginger slices and bring to a boil.
  3. Gently lower the chicken into the pot and let it simmer for 30-40 minutes, or until cooked through.
  4. Remove the chicken and place it in an ice bath to stop the cooking process. Then, pat it dry and rub sesame oil all over the skin.
  5. Rinse the rice and cook it in the chicken broth with minced garlic until fluffy.
  6. While the rice is cooking, prepare the dipping sauce by mixing soy sauce, sesame oil, and chopped green onions.
  7. Once everything is ready, carve the chicken and serve it with the fragrant rice, sliced cucumber, and tomato. Enjoy with the dipping sauce!
