Ingredients
- 1 lb beef, cut into cubes
- 2 onions, finely chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 tomatoes, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp ground coriander
- 1/2 tsp ground black pepper
- 1/4 tsp cayenne pepper
- Salt to taste
- 3 cups beef broth
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onions and garlic, and sauté until the onions are translucent.
- Add the beef cubes and brown on all sides.
- Stir in the cumin, paprika, coriander, black pepper, cayenne pepper, and salt.
- Add the carrots, potatoes, and tomatoes to the pot.
- Pour in the beef broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 1 hour or until the beef is tender.
- Adjust the seasoning if needed and serve hot.
