Fragrant Jarkop with Beef (Жаркоп с говядиной)

Ingredients

  • 1 lb beef, cut into cubes
  • 2 onions, finely chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp ground black pepper
  • 1/4 tsp cayenne pepper
  • Salt to taste
  • 3 cups beef broth
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onions and garlic, and sauté until the onions are translucent.
  3. Add the beef cubes and brown on all sides.
  4. Stir in the cumin, paprika, coriander, black pepper, cayenne pepper, and salt.
  5. Add the carrots, potatoes, and tomatoes to the pot.
  6. Pour in the beef broth and bring the mixture to a boil.
  7. Reduce the heat to low, cover the pot, and simmer for 1 hour or until the beef is tender.
  8. Adjust the seasoning if needed and serve hot.
