Fragrant Lamb and Date Tagine (Tajine d'Agneau et de Dattes Parfumé)
Tajine d'Agneau et de Dattes Parfumé, or Fragrant Lamb and Date Tagine, is a traditional dish from Djiboutian cuisine. This flavorful and aromatic stew is perfect for a special occasion or a cozy family dinner.
Ingredients
- 2 lbs lamb, cut into chunks
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- 1/2 tsp ground black pepper
- 1/2 tsp salt
- 1/4 cup olive oil
- 1 cup pitted dates
- 2 cups chicken broth
- 2 tbsp honey
- 2 tbsp toasted sesame seeds, for garnish
Instructions
- In a large tajine or Dutch oven, heat the olive oil over medium heat. Add the onions and garlic, and cook until softened.
- Add the lamb chunks to the tajine and brown on all sides.
- Stir in the ginger, cumin, cinnamon, turmeric, black pepper, and salt. Cook for 2 minutes to toast the spices.
- Pour in the chicken broth and add the dates. Bring to a simmer, then reduce the heat to low and cover. Cook for 1.5 hours, stirring occasionally.
- Stir in the honey and cook for an additional 30 minutes, or until the lamb is tender and the sauce has thickened.
- Sprinkle with toasted sesame seeds before serving.
