Ingredients

  • 500g lamb, cut into chunks
  • 2 onions, chopped

  • 3 potatoes, diced
  • 1 red bell pepper, chopped
  • 2 tomatoes, diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • Salt to taste
  • 3 cups water or broth
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the lamb chunks and brown on all sides.
  3. Add the chopped onions and minced garlic, sauté until fragrant.
  4. Stir in the tomato paste, paprika, cumin, black pepper, and salt.
  5. Add the carrots, potatoes, bell pepper, and tomatoes to the pot.
  6. Pour in the water or broth, bring to a boil, then reduce heat to low and simmer for 2 hours, or until the lamb is tender.
  7. Adjust seasoning if needed and serve hot.
