Ingredients
- 500g lamb, cut into chunks
- 2 onions, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 1 red bell pepper, chopped
- 2 tomatoes, diced
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp black pepper
- Salt to taste
- 3 cups water or broth
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the lamb chunks and brown on all sides.
- Add the chopped onions and minced garlic, sauté until fragrant.
- Stir in the tomato paste, paprika, cumin, black pepper, and salt.
- Add the carrots, potatoes, bell pepper, and tomatoes to the pot.
- Pour in the water or broth, bring to a boil, then reduce heat to low and simmer for 2 hours, or until the lamb is tender.
- Adjust seasoning if needed and serve hot.
