Fragrant Lotus Leaf Rice (香荷叶饭)
香荷叶饭 (Fragrant Lotus Leaf Rice) is a classic dish in Chaoshan (Teochew) Cuisine, known for its aromatic and flavorful combination of rice, meat, and seafood, all wrapped and steamed in lotus leaves.
Ingredients
- 2 cups jasmine rice
- 4 lotus leaves, dried and soaked
- 200g chicken, diced
- 150g Chinese sausage, sliced
- 150g shrimp, peeled and deveined
- 4 shiitake mushrooms, sliced
- 4 slices of ginger
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon white pepper
- 2 cups chicken broth
Instructions
- Rinse the jasmine rice and soak in water for 30 minutes. Drain and set aside.
- Marinate the chicken, Chinese sausage, and shrimp with soy sauce, oyster sauce, Shaoxing wine, sesame oil, sugar, salt, and white pepper for 15 minutes.
- Heat a wok over high heat and add 2 tablespoons of oil. Stir-fry the ginger and garlic until fragrant.
- Add the marinated chicken, Chinese sausage, shrimp, and shiitake mushrooms. Stir-fry for 3-4 minutes.
- Add the soaked rice and stir-fry for another 2 minutes. Transfer the mixture to a plate.
- Divide the rice mixture into 4 portions and place each portion onto a lotus leaf. Wrap into a tight parcel.
- Place the lotus leaf parcels in a steamer and steam for 30 minutes.
- Serve the fragrant lotus leaf rice hot, unwrapping the lotus leaves at the table.
