香荷叶饭 (Fragrant Lotus Leaf Rice) is a classic dish in Chaoshan (Teochew) Cuisine, known for its aromatic and flavorful combination of rice, meat, and seafood, all wrapped and steamed in lotus leaves.

Fragrant Lotus Leaf Rice (香荷叶饭)

Ingredients

  • 2 cups jasmine rice
  • 4 lotus leaves, dried and soaked
  • 200g chicken, diced
  • 150g Chinese sausage, sliced
  • 150g shrimp, peeled and deveined
  • 4 shiitake mushrooms, sliced
  • 4 slices of ginger
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 2 cups chicken broth

Instructions

  1. Rinse the jasmine rice and soak in water for 30 minutes. Drain and set aside.
  2. Marinate the chicken, Chinese sausage, and shrimp with soy sauce, oyster sauce, Shaoxing wine, sesame oil, sugar, salt, and white pepper for 15 minutes.
  3. Heat a wok over high heat and add 2 tablespoons of oil. Stir-fry the ginger and garlic until fragrant.
  4. Add the marinated chicken, Chinese sausage, shrimp, and shiitake mushrooms. Stir-fry for 3-4 minutes.
  5. Add the soaked rice and stir-fry for another 2 minutes. Transfer the mixture to a plate.
  6. Divide the rice mixture into 4 portions and place each portion onto a lotus leaf. Wrap into a tight parcel.
  7. Place the lotus leaf parcels in a steamer and steam for 30 minutes.
  8. Serve the fragrant lotus leaf rice hot, unwrapping the lotus leaves at the table.
