Ingredients
- 2 cups jasmine rice
- 10 dried shiitake mushrooms
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1 teaspoon sesame oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 green onions, chopped (for garnish)
Instructions
- Soak the dried shiitake mushrooms in hot water for 20 minutes, then drain and slice them.
- Rinse the jasmine rice until the water runs clear, then drain.
- In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and sliced mushrooms, and sauté for 2-3 minutes.
- Add the drained rice to the pot and stir to combine with the mushrooms.
- Pour in the vegetable broth, soy sauce, sesame oil, salt, and black pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork, then garnish with chopped green onions before serving.
