Ingredients

  • 2 cups jasmine rice
  • 10 dried shiitake mushrooms
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped (for garnish)

Instructions

  1. Soak the dried shiitake mushrooms in hot water for 20 minutes, then drain and slice them.
  2. Rinse the jasmine rice until the water runs clear, then drain.
  3. In a large pot, heat the vegetable oil over medium heat. Add the minced garlic and sliced mushrooms, and sauté for 2-3 minutes.
  4. Add the drained rice to the pot and stir to combine with the mushrooms.
  5. Pour in the vegetable broth, soy sauce, sesame oil, salt, and black pepper. Stir well.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Fluff the rice with a fork, then garnish with chopped green onions before serving.
