Fragrant Plov with Quince (Арбузный плов)
This fragrant plov with quince, known as "Арбузный плов" in Kyrgyz, is a traditional dish that combines the richness of plov with the unique flavor of quince. It's a delightful and aromatic meal that is perfect for special occasions or gatherings.
Ingredients
- 2 cups jasmine rice
- 1 lb lamb, cut into chunks
- 2 quinces, peeled, cored, and sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1/4 cup vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- Salt and pepper to taste
- 4 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and cook until they start to sizzle.
- Add the sliced onions and cook until they are soft and golden brown.
- Add the lamb chunks and cook until browned on all sides.
- Stir in the garlic, ground coriander, and ground turmeric, and cook for a few minutes until fragrant.
- Add the rice and quince slices to the pot, and season with salt and pepper. Stir to combine everything evenly.
- Pour in the water, bring to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes until the rice is cooked and the quince is tender.
- Fluff the plov with a fork before serving.
