Ingredients

  • 2 cups jasmine rice
  • 1 lb lamb, cut into chunks
  • 2 quinces, peeled, cored, and sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup vegetable oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • 4 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and cook until they start to sizzle.
  2. Add the sliced onions and cook until they are soft and golden brown.
  3. Add the lamb chunks and cook until browned on all sides.
  4. Stir in the garlic, ground coriander, and ground turmeric, and cook for a few minutes until fragrant.
  5. Add the rice and quince slices to the pot, and season with salt and pepper. Stir to combine everything evenly.
  6. Pour in the water, bring to a boil, then reduce the heat to low, cover, and simmer for 30-40 minutes until the rice is cooked and the quince is tender.
  7. Fluff the plov with a fork before serving.
