Fragrant Spicy Chicken (Xiāng Là Jī)

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons Sichuan peppercorns
  • 1 tablespoon chili flakes
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil
  • Salt to taste

Instructions

  1. In a dry skillet, toast the Sichuan peppercorns and chili flakes over medium heat until fragrant. Transfer to a mortar and pestle and grind into a coarse powder.
  2. In a bowl, mix the ground Sichuan peppercorn and chili mixture with soy sauce, rice vinegar, garlic, ginger, and green onions to make the marinade.
  3. Cut the chicken breasts into bite-sized pieces and marinate in the prepared mixture for 15 minutes.
  4. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken pieces and cook until golden brown and cooked through.
  5. Season with salt to taste and serve hot.
