Fragrant Spicy Shrimp (Xiāng Là Xiā)

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, chopped
  • 1 red chili, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon Sichuan peppercorns
  • 1/2 teaspoon chili flakes
  • Salt to taste

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium-high heat.
  2. Add garlic, ginger, green onions, and red chili. Stir-fry for 1-2 minutes until fragrant.
  3. Add shrimp to the wok and cook for 2-3 minutes until they turn pink and opaque.
  4. In a small bowl, mix together soy sauce, rice vinegar, sugar, sesame oil, Sichuan peppercorns, and chili flakes.
  5. Pour the sauce over the shrimp and stir to coat evenly. Cook for an additional 1-2 minutes.
  6. Season with salt to taste and remove from heat.
  7. Serve the Fragrant Spicy Shrimp hot, garnished with additional green onions if desired.
