Ingredients

  • 4 eggs

  • 1/2 cup grated Gruyère cheese
  • 1/4 cup butter

Instructions

  1. In a large bowl, mix together the flour, eggs, milk, salt, and nutmeg to form a smooth batter.
  2. Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter into the boiling water to form small noodles.
  3. Cook the spaetzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and transfer to a large bowl.
  4. Add the grated Emmental and Gruyère cheese to the hot spaetzle and stir until the cheese is melted and the noodles are coated.
  5. In a skillet, melt the butter over medium heat and add the sliced onions. Cook until the onions are golden and crispy.
  6. Top the cheese-coated spaetzle with the crispy onions and season with salt and pepper to taste before serving.
