Ingredients

Instructions
- In a large bowl, mix together the flour, eggs, milk, salt, and nutmeg to form a smooth batter.
- Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter into the boiling water to form small noodles.
- Cook the spaetzle for 2-3 minutes or until they float to the surface, then remove them with a slotted spoon and transfer to a large bowl.
- Add the grated Emmental and Gruyère cheese to the hot spaetzle and stir until the cheese is melted and the noodles are coated.
- In a skillet, melt the butter over medium heat and add the sliced onions. Cook until the onions are golden and crispy.
- Top the cheese-coated spaetzle with the crispy onions and season with salt and pepper to taste before serving.
