Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into small pieces
- 1 teaspoon almond extract
- 2 cups pitted cherries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan.
- In a large bowl, combine the all-purpose flour, almond flour, 1/2 cup sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Press half of the mixture into the bottom of the prepared baking pan to form the crust.
- In another bowl, combine the cherries, 1/4 cup sugar, and cornstarch. Spread the cherry mixture over the crust in the pan.
- Stir the almond extract into the remaining flour mixture, then sprinkle it over the cherry layer.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden brown.
- Cool completely in the pan on a wire rack before cutting into bars.
