Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 can (21 oz) cherry pie filling
  • 1/2 cup old-fashioned oats
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
  2. In a large bowl, mix the flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  3. Add the egg and vanilla extract to the flour mixture and mix until combined. Press the mixture into the bottom of the prepared baking pan.
  4. Spoon the cherry pie filling over the crust and spread it evenly.
  5. In a small bowl, combine the oats, brown sugar, and melted butter. Sprinkle this streusel mixture over the cherry filling.
  6. Bake for 35-40 minutes, or until the streusel is golden brown. Allow the bars to cool completely in the pan before cutting into squares.
