Franconian Cherry Streusel Bars

Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into small pieces
- 1 egg
- 1 teaspoon vanilla extract
- 1 can (21 oz) cherry pie filling
- 1/2 cup old-fashioned oats
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking pan.
- In a large bowl, mix the flour, granulated sugar, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add the egg and vanilla extract to the flour mixture and mix until combined. Press the mixture into the bottom of the prepared baking pan.
- Spoon the cherry pie filling over the crust and spread it evenly.
- In a small bowl, combine the oats, brown sugar, and melted butter. Sprinkle this streusel mixture over the cherry filling.
- Bake for 35-40 minutes, or until the streusel is golden brown. Allow the bars to cool completely in the pan before cutting into squares.
