Ingredients

  • 4 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp all-purpose flour
  • 6 cups beef or vegetable broth
  • 1/2 cup white wine
  • Salt and pepper to taste
  • 4 slices of bread
  • 1 cup grated cheese (such as Gruyère or Emmental)

Instructions

  1. In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 30 minutes.
  2. Sprinkle the flour over the caramelized onions and cook for an additional 2-3 minutes.
  3. Pour in the white wine and deglaze the pot, scraping up any browned bits from the bottom.
  4. Add the beef or vegetable broth to the pot and bring the soup to a simmer. Cook for 20-30 minutes to allow the flavors to meld.
  5. Season the soup with salt and pepper to taste.
  6. Preheat the broiler. Ladle the hot soup into oven-safe bowls. Top each bowl with a slice of bread and a generous amount of grated cheese.
  7. Place the bowls on a baking sheet and broil for 2-3 minutes, or until the cheese is melted and bubbly.
  8. Remove the bowls from the oven and let cool for a few minutes before serving.
