Ingredients
- 4 large onions, thinly sliced
- 2 tbsp butter
- 1 tbsp all-purpose flour
- 6 cups beef or vegetable broth
- 1/2 cup white wine
- Salt and pepper to taste
- 4 slices of bread
- 1 cup grated cheese (such as Gruyère or Emmental)
Instructions
- In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized and golden brown, about 30 minutes.
- Sprinkle the flour over the caramelized onions and cook for an additional 2-3 minutes.
- Pour in the white wine and deglaze the pot, scraping up any browned bits from the bottom.
- Add the beef or vegetable broth to the pot and bring the soup to a simmer. Cook for 20-30 minutes to allow the flavors to meld.
- Season the soup with salt and pepper to taste.
- Preheat the broiler. Ladle the hot soup into oven-safe bowls. Top each bowl with a slice of bread and a generous amount of grated cheese.
- Place the bowls on a baking sheet and broil for 2-3 minutes, or until the cheese is melted and bubbly.
- Remove the bowls from the oven and let cool for a few minutes before serving.
