Franconian Onion Tart

Franconian Onion Tart is a traditional dish from the Franconian region of Germany. This savory tart is made with a flaky pastry crust and a rich, flavorful filling of caramelized onions, eggs, and cream.

Franconian Onion Tart

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3 large onions, thinly sliced
  • 2 tablespoons butter
  • 2 eggs
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Press the mixture into the bottom and up the sides of a tart pan.
  3. In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized, about 20 minutes. Season with salt and pepper.
  4. In a separate bowl, whisk together the eggs and heavy cream. Season with salt and pepper.
  5. Spoon the caramelized onions into the tart crust. Pour the egg and cream mixture over the onions.
  6. Bake in the preheated oven for 30-40 minutes, or until the filling is set and the crust is golden brown.
