Franconian Plum Cake
Franconian Plum Cake is a traditional dessert from the Franconian region of Germany. This delicious cake is made with fresh plums and a buttery cake batter, creating a perfect balance of sweet and tart flavors.
Ingredients
- 500g plums, pitted and halved
- 200g all-purpose flour
- 150g granulated sugar
- 125g unsalted butter, softened
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 tbsp breadcrumbs
- 1 tbsp powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spoon the batter into the prepared cake pan and smooth the top. Sprinkle the breadcrumbs over the batter.
- Arrange the plum halves, cut side up, on top of the batter in a circular pattern, pressing them slightly into the batter.
- Bake for 40-45 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Dust the cooled cake with powdered sugar before serving.
