Franconian Plum Cake

Ingredients

  • 500g plums, pitted and halved
  • 200g all-purpose flour
  • 150g granulated sugar
  • 125g unsalted butter, softened
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp breadcrumbs
  • 1 tbsp powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Spoon the batter into the prepared cake pan and smooth the top. Sprinkle the breadcrumbs over the batter.
  6. Arrange the plum halves, cut side up, on top of the batter in a circular pattern, pressing them slightly into the batter.
  7. Bake for 40-45 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Dust the cooled cake with powdered sugar before serving.
