Ingredients
- 6 slices bacon, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 large potatoes, peeled and diced
- 6 cups chicken or vegetable broth
- 1 teaspoon thyme
- Salt and pepper to taste
- 1/2 cup heavy cream (optional)
Instructions
- In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
- Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
- Add the diced potatoes, chicken or vegetable broth, and thyme to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth. Return the soup to the pot if necessary.
- Season the soup with salt and pepper to taste. If using, stir in the heavy cream for added richness.
- Serve the soup hot, topped with the crispy bacon and additional thyme if desired.
