Ingredients

  • 6 slices bacon, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 large potatoes, peeled and diced
  • 6 cups chicken or vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove the bacon from the pot and set aside, leaving the bacon fat in the pot.
  2. Add the diced onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  3. Add the diced potatoes, chicken or vegetable broth, and thyme to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
  4. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth. Return the soup to the pot if necessary.
  5. Season the soup with salt and pepper to taste. If using, stir in the heavy cream for added richness.
  6. Serve the soup hot, topped with the crispy bacon and additional thyme if desired.
