Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water
  • 1 tablespoon granulated sugar
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • 1 egg, beaten
  • Coarse sea salt, for topping

Instructions

  1. In a large bowl, dissolve the yeast in warm water. Add sugar and stir until dissolved. Let it sit for 5 minutes until it becomes foamy.
  2. Add flour and salt to the yeast mixture. Mix until the dough comes together.
  3. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour.
  5. Preheat the oven to 400°F (200°C). In a large pot, bring water and baking soda to a boil.
  6. Divide the dough into 6 equal pieces and roll each piece into a rope. Shape each rope into a pretzel and dip into the boiling water for 30 seconds.
  7. Place the pretzels on a baking sheet, brush with beaten egg, and sprinkle with coarse sea salt.
  8. Bake for 12-15 minutes until golden brown. Let the pretzel bread cool before serving.
