Ingredients
- 4 chicken thighs

Instructions
- In a large skillet, heat the vegetable oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the skillet. Cook for 5-7 minutes on each side, or until golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion, minced garlic, and grated ginger. Cook for 2-3 minutes, or until the onion is soft and translucent.

- Cover the skillet and let the chicken simmer in the sauce for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
