Ingredients
- 2 1/4 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 2 1/4 teaspoons active dry yeast
- 3/4 cup milk
- 2 large eggs
- 1/4 cup unsalted butter, softened
- 1 teaspoon vanilla extract
- Vegetable oil, for frying
- 1/2 cup raspberry jam or pastry cream, for filling
- Powdered sugar, for dusting
Instructions
- In a large bowl, combine the flour, sugar, salt, and yeast.
- In a separate bowl, warm the milk in the microwave for about 30 seconds. Add the warm milk, eggs, butter, and vanilla extract to the dry ingredients. Mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes, or until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
- Once the dough has risen, punch it down and divide it into 12 equal pieces. Shape each piece into a ball and place them on a baking sheet lined with parchment paper. Cover and let them rise for an additional 30 minutes.
- Heat the vegetable oil in a deep pot to 350°F (175°C). Carefully add the doughnuts, a few at a time, and fry for 2-3 minutes on each side, or until golden brown. Remove with a slotted spoon and drain on paper towels.
- Once the doughnuts have cooled slightly, use a piping bag to fill them with raspberry jam or pastry cream.
- Dust the filled doughnuts with powdered sugar before serving.
