French Coq Au Vin
Coq au Vin is a classic French dish that originated in the northern region of Europe. This hearty stew features chicken braised in red wine, mushrooms, and aromatic vegetables, resulting in a rich and flavorful dish that is perfect for a cozy dinner.
Ingredients
- 1 whole chicken, cut into pieces
- 6 slices of bacon, chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves of garlic, minced
- 1 cup of red wine
- 1 cup of chicken broth
- 1 tablespoon of tomato paste
- 1 teaspoon of thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons of all-purpose flour
- 8 ounces of mushrooms, sliced
- 2 tablespoons of butter
- Fresh parsley for garnish
Instructions
- In a large Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
- Season the chicken pieces with salt and pepper, then brown them in the bacon drippings. Remove the chicken and set aside.
- Add the chopped onion, carrots, and garlic to the pot, and cook until softened.
- Pour in the red wine and chicken broth, then add the tomato paste, thyme, and bay leaf. Return the chicken and bacon to the pot, and bring the mixture to a simmer.
- In a small bowl, mix the flour with some water to create a slurry, then stir it into the stew to thicken the sauce.
- In a separate pan, sauté the sliced mushrooms in butter until golden brown, then add them to the stew.
- Cover the pot and let the Coq au Vin simmer for about 1.5 to 2 hours, or until the chicken is tender and the flavors have melded together.
- Remove the bay leaf, and adjust the seasoning with salt and pepper if needed.
- Serve the Coq au Vin hot, garnished with fresh parsley.
