French Coq Au Vin

Ingredients

  • 1 whole chicken, cut into pieces
  • 6 slices of bacon, chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves of garlic, minced
  • 1 cup of red wine
  • 1 cup of chicken broth
  • 1 tablespoon of tomato paste
  • 1 teaspoon of thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons of all-purpose flour
  • 8 ounces of mushrooms, sliced
  • 2 tablespoons of butter
  • Fresh parsley for garnish

Instructions

  1. In a large Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Season the chicken pieces with salt and pepper, then brown them in the bacon drippings. Remove the chicken and set aside.
  3. Add the chopped onion, carrots, and garlic to the pot, and cook until softened.
  4. Pour in the red wine and chicken broth, then add the tomato paste, thyme, and bay leaf. Return the chicken and bacon to the pot, and bring the mixture to a simmer.
  5. In a small bowl, mix the flour with some water to create a slurry, then stir it into the stew to thicken the sauce.
  6. In a separate pan, sauté the sliced mushrooms in butter until golden brown, then add them to the stew.
  7. Cover the pot and let the Coq au Vin simmer for about 1.5 to 2 hours, or until the chicken is tender and the flavors have melded together.
  8. Remove the bay leaf, and adjust the seasoning with salt and pepper if needed.
  9. Serve the Coq au Vin hot, garnished with fresh parsley.
