Ingredients

  • 1 pound thinly sliced roast beef
  • 4 French rolls or baguettes
  • 8 slices provolone cheese
  • 1 onion, thinly sliced
  • 4 cups beef broth
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the sliced onions and cook until caramelized, about 15 minutes.
  2. In a separate pot, heat the beef broth and minced garlic over medium heat.
  3. Divide the roast beef into 4 portions and place them in the simmering broth to warm for 3-5 minutes.
  4. Slice the French rolls in half and place 2 slices of provolone cheese on one side of each roll.
  5. Using tongs, transfer the warm roast beef onto the cheese-covered rolls.
  6. Top the roast beef with caramelized onions and close the sandwiches.
  7. Serve the sandwiches with small bowls of the warm au jus for dipping.
