Ingredients

  • 1 3-pound beef chuck roast
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 4 French rolls
  • 8 slices provolone cheese

Instructions

  1. In a slow cooker, place the beef roast, onion, and garlic.
  2. In a bowl, mix together the beef broth, soy sauce, Worcestershire sauce, rosemary, thyme, and black pepper. Pour over the beef in the slow cooker.
  3. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  4. Remove the beef from the slow cooker and shred using two forks.
  5. Slice the French rolls in half and place the provolone cheese on one side of each roll.
  6. Broil the rolls in the oven until the cheese is melted and the bread is toasted.
  7. Divide the shredded beef among the rolls and serve with the cooking juices as au jus for dipping.
