French Flambé (Flambé Francese)
Flambé Francese, also known as French Flambé, is a classic Southern European dish that combines the technique of flambéing with the flavors of French cuisine. This impressive dish is perfect for special occasions and will surely impress your guests with its dramatic presentation.
Ingredients
- 4 chicken breasts
- 1/2 cup all-purpose flour
- 2 eggs
- 1/4 cup grated Parmesan cheese
- 1/4 cup white wine
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup brandy or cognac
- 1/4 cup chopped fresh parsley
Instructions
- Preheat the oven to 375°F (190°C).
- Place the flour in a shallow dish and season with salt and pepper. In another dish, beat the eggs. Dip each chicken breast in the flour, then in the beaten eggs, and finally in the grated Parmesan cheese to coat.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Transfer the chicken to a baking dish and bake for 15-20 minutes, or until cooked through.
- In the same skillet, melt the butter over medium heat. Add the white wine and chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the heavy cream and simmer for 5 minutes to thicken the sauce. Season with salt and pepper to taste.
- Remove the skillet from the heat and carefully add the brandy or cognac. Return the skillet to the heat and carefully ignite the alcohol with a long lighter. Allow the flames to subside, then stir in the chopped parsley.
- To serve, place the chicken breasts on a platter and pour the flambéed sauce over the top. Garnish with additional parsley if desired.
