Fresh Catch Ceviche

Ingredients
- 1 lb fresh white fish, such as sea bass or cod, diced
- 1 cup fresh lime juice
- 1 red onion, thinly sliced
- 1-2 jalapeños, seeded and diced
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped cilantro
- Salt and pepper to taste
Instructions
- In a glass or ceramic bowl, combine the diced fish and lime juice. Make sure the fish is fully submerged in the juice. Cover and refrigerate for 15-20 minutes, or until the fish is opaque and "cooked" by the lime juice.
- Once the fish is ready, drain off the lime juice and add the red onion, jalapeños, cherry tomatoes, and cilantro. Season with salt and pepper to taste. Gently toss to combine.
- Chill the ceviche for at least 30 minutes before serving to allow the flavors to meld together.
