Fresh Catch Fishcakes

Ingredients

  • 1 lb fresh white fish, such as cod or haddock, cooked and flaked
  • 2 cups mashed potatoes
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped green onions
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine the flaked fish, mashed potatoes, parsley, green onions, mayonnaise, Dijon mustard, salt, and black pepper. Mix until well combined.
  2. Form the mixture into small patties and coat each patty with breadcrumbs, then dip in beaten eggs, and coat with breadcrumbs again.
  3. Heat the olive oil in a large skillet over medium heat. Cook the fishcakes for 3-4 minutes on each side, or until golden brown and crispy.
  4. Remove the fishcakes from the skillet and place them on a paper towel to drain any excess oil.
  5. Serve the fishcakes hot with a side of tartar sauce or a squeeze of lemon.
