Fresh Catch Fishcakes
Fresh Catch Fishcakes are a delicious and easy-to-make dish that highlights the fresh seafood of Pembrokeshire. These fishcakes are perfect for a light lunch or a tasty appetizer.
Ingredients
- 1 lb fresh white fish, such as cod or haddock, cooked and flaked
- 2 cups mashed potatoes
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup breadcrumbs
- 2 eggs, beaten
- 2 tbsp olive oil
Instructions
- In a large bowl, combine the flaked fish, mashed potatoes, parsley, green onions, mayonnaise, Dijon mustard, salt, and black pepper. Mix until well combined.
- Form the mixture into small patties and coat each patty with breadcrumbs, then dip in beaten eggs, and coat with breadcrumbs again.
- Heat the olive oil in a large skillet over medium heat. Cook the fishcakes for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fishcakes from the skillet and place them on a paper towel to drain any excess oil.
- Serve the fishcakes hot with a side of tartar sauce or a squeeze of lemon.
