Fresh Mango Salad with Shrimp (Gỏi xoài tôm)

Ingredients

  • 2 ripe mangoes, julienned
  • 1 pound cooked shrimp, peeled and deveined
  • 1/2 cup fresh mint leaves, chopped
  • 1/4 cup peanuts, crushed
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup Vietnamese coriander (rau răm), chopped (optional)
  • 1/4 cup fried shallots
  • 1/4 cup fish sauce
  • 2 tablespoons sugar
  • 2 tablespoons lime juice
  • 1 tablespoon garlic, minced
  • 1 tablespoon bird's eye chili, minced (optional)

Instructions

  1. In a large bowl, combine the mangoes, shrimp, mint leaves, peanuts, red onion, cilantro, green onions, and Vietnamese coriander.
  2. In a small bowl, whisk together the fish sauce, sugar, lime juice, garlic, and bird's eye chili to make the dressing.
  3. Pour the dressing over the mango and shrimp mixture, and toss to coat evenly.
  4. Sprinkle fried shallots on top before serving.
