Ingredients
- 2 ripe mangoes, julienned
- 1 pound cooked shrimp, peeled and deveined
- 1/2 cup fresh mint leaves, chopped
- 1/4 cup peanuts, crushed
- 1/4 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 1/4 cup green onions, chopped
- 1/4 cup Vietnamese coriander (rau răm), chopped (optional)
- 1/4 cup fried shallots
- 1/4 cup fish sauce
- 2 tablespoons sugar
- 2 tablespoons lime juice
- 1 tablespoon garlic, minced
- 1 tablespoon bird's eye chili, minced (optional)
Instructions
- In a large bowl, combine the mangoes, shrimp, mint leaves, peanuts, red onion, cilantro, green onions, and Vietnamese coriander.
- In a small bowl, whisk together the fish sauce, sugar, lime juice, garlic, and bird's eye chili to make the dressing.
- Pour the dressing over the mango and shrimp mixture, and toss to coat evenly.
- Sprinkle fried shallots on top before serving.
