Ingredients

  • 1 cup rice flour
  • 1 1/2 cups water
  • 1/2 teaspoon salt
  • 1/4 pound ground pork
  • 1/4 cup wood ear mushrooms, soaked and finely chopped
  • 2 shallots, finely chopped
  • 2 tablespoons fish sauce
  • 1/4 teaspoon ground black pepper
  • 1/4 cup cooking oil
  • Fresh herbs (cilantro, mint, Vietnamese balm)
  • Bean sprouts
  • Green leaf lettuce
  • 1/4 cup fried shallots

Instructions

  1. In a bowl, mix the rice flour, water, and salt to make the rice batter. Let it rest for 15 minutes.
  2. In a separate bowl, mix the ground pork, wood ear mushrooms, shallots, fish sauce, and black pepper to make the filling.
  3. Heat a non-stick pan over medium heat and brush with a thin layer of oil. Pour a ladle of the rice batter into the pan, swirling to coat the bottom evenly. Cover and cook for 1-2 minutes until the rice batter sets into a thin sheet.
  4. Place a spoonful of the filling onto the rice sheet and roll it up. Repeat with the remaining batter and filling.
  5. Serve the rice noodle rolls with fresh herbs, bean sprouts, lettuce, and fried shallots.
