Ingredients
- 1 cup rice flour
- 1 1/2 cups water
- 1/2 teaspoon salt
- 1/4 pound ground pork
- 1/4 cup wood ear mushrooms, soaked and finely chopped
- 2 shallots, finely chopped
- 2 tablespoons fish sauce
- 1/4 teaspoon ground black pepper
- 1/4 cup cooking oil
- Fresh herbs (cilantro, mint, Vietnamese balm)
- Bean sprouts
- Green leaf lettuce
- 1/4 cup fried shallots
Instructions
- In a bowl, mix the rice flour, water, and salt to make the rice batter. Let it rest for 15 minutes.
- In a separate bowl, mix the ground pork, wood ear mushrooms, shallots, fish sauce, and black pepper to make the filling.
- Heat a non-stick pan over medium heat and brush with a thin layer of oil. Pour a ladle of the rice batter into the pan, swirling to coat the bottom evenly. Cover and cook for 1-2 minutes until the rice batter sets into a thin sheet.
- Place a spoonful of the filling onto the rice sheet and roll it up. Repeat with the remaining batter and filling.
- Serve the rice noodle rolls with fresh herbs, bean sprouts, lettuce, and fried shallots.
