Fresh Rice Paper Rolls with Tofu and Peanut Sauce (Gỏi cuốn chay)
Gỏi cuốn chay, or Fresh Rice Paper Rolls with Tofu, are a popular Vietnamese dish that is light, refreshing, and full of flavor. These rolls are filled with marinated tofu, fresh herbs, and vermicelli noodles, then served with a delicious peanut dipping sauce. They make for a perfect appetizer or a light and healthy meal.
Ingredients
- 12 rice paper wrappers
- 200g firm tofu, sliced into strips
- 1 cup cooked vermicelli noodles
- 1 cup shredded lettuce
- 1 cup fresh mint leaves
- 1 cup fresh cilantro leaves
- 1 cup bean sprouts
- 1/2 cup chopped roasted peanuts
- 1/4 cup hoisin sauce
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp sesame oil
- 1 tsp sriracha sauce (optional)
- Warm water for soaking rice paper
Instructions
- Prepare the tofu by marinating it in soy sauce, garlic, and sesame oil for 15 minutes. Then, pan-fry the tofu until golden brown.
- Soak the rice paper wrappers in warm water for a few seconds until soft, then lay them flat on a clean surface.
- Place a small amount of vermicelli noodles, lettuce, mint, cilantro, bean sprouts, and a few strips of tofu on each wrapper.
- Roll the wrappers tightly, tucking in the sides as you go, to form a neat roll.
- Make the peanut dipping sauce by combining hoisin sauce, peanut butter, lime juice, and sriracha (if using). Mix well and top with chopped peanuts.
- Serve the rolls with the peanut dipping sauce and enjoy!
