Fresh Rice Paper Rolls with Tofu and Peanut Sauce (Gỏi cuốn chay)

Ingredients

  • 12 rice paper wrappers
  • 200g firm tofu, sliced into strips
  • 1 cup cooked vermicelli noodles
  • 1 cup shredded lettuce
  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1 cup bean sprouts
  • 1/2 cup chopped roasted peanuts
  • 1/4 cup hoisin sauce
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp sesame oil
  • 1 tsp sriracha sauce (optional)
  • Warm water for soaking rice paper

Instructions

  1. Prepare the tofu by marinating it in soy sauce, garlic, and sesame oil for 15 minutes. Then, pan-fry the tofu until golden brown.
  2. Soak the rice paper wrappers in warm water for a few seconds until soft, then lay them flat on a clean surface.
  3. Place a small amount of vermicelli noodles, lettuce, mint, cilantro, bean sprouts, and a few strips of tofu on each wrapper.
  4. Roll the wrappers tightly, tucking in the sides as you go, to form a neat roll.
  5. Make the peanut dipping sauce by combining hoisin sauce, peanut butter, lime juice, and sriracha (if using). Mix well and top with chopped peanuts.
  6. Serve the rolls with the peanut dipping sauce and enjoy!
