Fried Beans With Fried Plantains (ewa Dodo)
Fried Beans with Fried Plantains, also known as Ewa Dodo, is a popular dish in Benin cuisine. This savory and sweet combination of beans and plantains is a delicious and satisfying meal.
Ingredients
- 2 cups of black-eyed beans
- 2 ripe plantains
- 1 onion, chopped
- 2 tomatoes, chopped
- 2 tablespoons of palm oil
- 1 teaspoon of salt
- 1 teaspoon of ground crayfish
- 1 teaspoon of chili powder
Instructions
- Wash the beans and place in a pot with enough water to cover. Cook until tender, then drain and set aside.
- Peel the plantains and cut into diagonal slices.
- Heat the palm oil in a frying pan and fry the plantain slices until golden brown. Remove and set aside.
- In the same pan, sauté the chopped onions and tomatoes until soft.
- Add the cooked beans, salt, ground crayfish, and chili powder. Stir well and cook for a few minutes.
- Add the fried plantains to the beans and mix gently.
- Serve hot and enjoy!
