Fried Cassava with Spicy Peanut Sauce (Manioc Frit avec Sauce aux Arachides Épicée)

Ingredients
- 2 lbs cassava, peeled and cut into sticks
- 1 cup peanut butter
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 1 scotch bonnet pepper, finely chopped
- 1 cup vegetable oil
- Salt to taste
Instructions
- In a large pot, boil the cassava sticks for 10 minutes or until slightly tender. Drain and set aside to cool.
- In a saucepan, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, tomatoes, garlic, and scotch bonnet pepper. Sauté until the vegetables are soft.
- Stir in the peanut butter and 1 cup of water to the saucepan. Simmer for 5 minutes, stirring occasionally, until the sauce thickens. Season with salt to taste.
- Heat the remaining vegetable oil in a large skillet over medium-high heat. Fry the cassava sticks in batches until golden brown and crispy. Drain on paper towels to remove excess oil.
- Serve the fried cassava with the spicy peanut sauce on the side.
