Fried Cassava with Spicy Peanut Sauce (Manioc Frit avec Sauce aux Arachides Épicée)

Ingredients

  • 2 lbs cassava, peeled and cut into sticks
  • 1 cup peanut butter
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1 scotch bonnet pepper, finely chopped
  • 1 cup vegetable oil
  • Salt to taste

Instructions

  1. In a large pot, boil the cassava sticks for 10 minutes or until slightly tender. Drain and set aside to cool.
  2. In a saucepan, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, tomatoes, garlic, and scotch bonnet pepper. Sauté until the vegetables are soft.
  3. Stir in the peanut butter and 1 cup of water to the saucepan. Simmer for 5 minutes, stirring occasionally, until the sauce thickens. Season with salt to taste.
  4. Heat the remaining vegetable oil in a large skillet over medium-high heat. Fry the cassava sticks in batches until golden brown and crispy. Drain on paper towels to remove excess oil.
  5. Serve the fried cassava with the spicy peanut sauce on the side.
