Fried Chicken Rice (lahori Chargha Biryani)
Fried Chicken Rice, also known as Lahori Chargha Biryani, is a flavorful and aromatic dish from Pakistani cuisine. This recipe combines the succulent flavors of fried chicken with the fragrant spices of biryani rice, creating a mouthwatering meal that is perfect for any occasion.
Ingredients
- 4 chicken leg quarters
- 2 cups basmati rice
- 1 large onion, thinly sliced
- 1/2 cup plain yogurt
- 3 cloves garlic, minced
- 1 tablespoon ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon saffron strands
- 4 cups chicken broth
- 1/4 cup vegetable oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large bowl, mix yogurt, ginger paste, garlic, red chili powder, turmeric, garam masala, and salt. Add the chicken leg quarters to the bowl and coat them with the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Heat vegetable oil in a large pot over medium heat. Add the cumin seeds and sliced onion. Cook until the onions are golden brown.
- Add the marinated chicken leg quarters to the pot and cook until they are golden brown on all sides.
- Meanwhile, rinse the basmati rice until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- Bring the chicken broth to a boil in a separate pot. Add the drained rice and saffron strands. Cook until the rice is 70% done, then drain any excess liquid.
- Layer the partially cooked rice over the fried chicken in the pot. Cover and cook on low heat for 10-15 minutes, allowing the flavors to meld together.
- Garnish with fresh cilantro and serve hot.
