Ingredients

  • 4 chicken thighs
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup vegetable oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup peanut butter
  • 2 cups chicken broth
  • 1 teaspoon cayenne pepper
  • 1 tablespoon tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1/4 cup chopped peanuts (for garnish)

Instructions

  1. In a bowl, mix the flour, salt, and black pepper. Dredge the chicken thighs in the seasoned flour.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken thighs and fry until golden brown and cooked through, about 8-10 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, sauté the chopped onion and minced garlic until softened.
  4. Add the peanut butter, chicken broth, cayenne pepper, tomato paste, soy sauce, and honey to the skillet. Stir to combine and bring to a simmer.
  5. Return the fried chicken thighs to the skillet, coating them with the peanut sauce. Simmer for an additional 10-15 minutes, until the sauce has thickened and the chicken is fully coated.
  6. Transfer the chicken and sauce to a serving platter and garnish with chopped peanuts.
