Ingredients
- 4 chicken thighs
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 cup vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup peanut butter
- 2 cups chicken broth
- 1 teaspoon cayenne pepper
- 1 tablespoon tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1/4 cup chopped peanuts (for garnish)
Instructions
- In a bowl, mix the flour, salt, and black pepper. Dredge the chicken thighs in the seasoned flour.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the chicken thighs and fry until golden brown and cooked through, about 8-10 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, sauté the chopped onion and minced garlic until softened.
- Add the peanut butter, chicken broth, cayenne pepper, tomato paste, soy sauce, and honey to the skillet. Stir to combine and bring to a simmer.
- Return the fried chicken thighs to the skillet, coating them with the peanut sauce. Simmer for an additional 10-15 minutes, until the sauce has thickened and the chicken is fully coated.
- Transfer the chicken and sauce to a serving platter and garnish with chopped peanuts.
