Ingredients

  • 4 chicken thighs
  • 1 cup all-purpose flour
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 can (14 oz) crushed tomatoes
  • 1 tablespoon sugar
  • Salt to taste

Instructions

  1. Preheat the vegetable oil in a large skillet over medium heat.
  2. In three separate bowls, place the flour, beaten eggs, and breadcrumbs.
  3. Season the chicken thighs with salt and black pepper, then coat each piece in the flour, dip in the egg, and coat with breadcrumbs.
  4. Fry the chicken in the preheated oil until golden brown and cooked through, about 6-8 minutes per side. Remove and drain on paper towels.
  5. In a separate saucepan, heat some oil and sauté the onion and garlic until softened.
  6. Add the paprika, cayenne pepper, crushed tomatoes, and sugar. Simmer for 15 minutes, then season with salt to taste.
