Fried Eggplant Rolls with Pomegranate Sauce (Nərgiz Dolmasi)

Ingredients

  • 2 large eggplants, thinly sliced lengthwise
  • 1 cup ground meat (beef or lamb)
  • 1/2 cup rice, uncooked
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • 1/4 cup vegetable oil for frying
  • 1 cup pomegranate juice
  • 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

  1. In a bowl, mix the ground meat, uncooked rice, chopped onion, minced garlic, parsley, dill, salt, and pepper.
  2. Place a spoonful of the meat mixture onto each eggplant slice and roll it up.
  3. Heat vegetable oil in a large skillet over medium heat. Fry the eggplant rolls until golden brown on all sides.
  4. In a separate saucepan, combine pomegranate juice, sugar, and cornstarch dissolved in water. Cook over medium heat until the sauce thickens.
