Ingredients
- 2 large eggplants, thinly sliced lengthwise
- 1 cup ground meat (beef or lamb)
- 1/2 cup rice, uncooked
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
- 1/4 cup vegetable oil for frying
- 1 cup pomegranate juice
- 2 tablespoons sugar
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions
- In a bowl, mix the ground meat, uncooked rice, chopped onion, minced garlic, parsley, dill, salt, and pepper.
- Place a spoonful of the meat mixture onto each eggplant slice and roll it up.
- Heat vegetable oil in a large skillet over medium heat. Fry the eggplant rolls until golden brown on all sides.
- In a separate saucepan, combine pomegranate juice, sugar, and cornstarch dissolved in water. Cook over medium heat until the sauce thickens.
- Serve the fried eggplant rolls with the pomegranate sauce drizzled on top.
