Ingredients
- 4 fillets of white fish (such as tilapia or cod)
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked white rice, chilled
- 1/2 cup frozen mixed vegetables
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1/2 cup diced bell pepper
- 1/2 cup diced ham or cooked shrimp (optional)
- 3 green onions, chopped
Instructions
- Preheat the vegetable oil in a large skillet over medium heat.
- Season the fish fillets with salt and pepper.
- Dredge the fish fillets in flour, dip in beaten eggs, and coat with breadcrumbs.
- Fry the fish fillets in the hot oil until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
- In a separate skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Saute the onion and garlic until fragrant, then add the bell pepper and mixed vegetables. Cook for 2-3 minutes.
- Add the chilled rice to the skillet and stir in the soy sauce. Cook, stirring frequently, until the rice is heated through.
- If using, stir in the diced ham or cooked shrimp and green onions. Cook for an additional 2 minutes.
- Serve the fried fish alongside the Chinese fried rice.
