Fried Hokkien Mee (炒福建面)

Ingredients

  • 400g Hokkien noodles
  • 200g prawns, shelled and deveined
  • 200g chicken, sliced
  • 3 cloves garlic, minced
  • 1 cup cabbage, shredded
  • 2 eggs, beaten
  • 2 stalks spring onions, chopped
  • 1 cup bean sprouts
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1/4 cup cooking oil

Instructions

  1. Boil the Hokkien noodles according to package instructions, then drain and set aside.
  2. Heat 2 tablespoons of cooking oil in a wok over high heat.
  3. Stir-fry the prawns and chicken until they are cooked, then remove from the wok and set aside.
  4. Heat the remaining cooking oil in the wok and sauté the garlic until fragrant.
  5. Add the cabbage and stir-fry for 2 minutes.
  6. Push the cabbage to the side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until set.
  7. Add the cooked prawns, chicken, and Hokkien noodles to the wok.
  8. Pour in the soy sauce, oyster sauce, dark soy sauce, sugar, and white pepper. Stir-fry until well combined.
  9. Add the bean sprouts and spring onions, then stir-fry for another 2 minutes.
  10. Remove from heat and serve hot.
