Fried Indian Bread With Vegetable Curry (bhojpuri Puri Sabzi)

Ingredients

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • Water (for kneading)
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1 green chili, chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. In a large mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead the mixture into a smooth dough. Cover the dough and let it rest for 15 minutes.
  2. Divide the dough into small balls and roll each ball into a flat, round shape to make puris.
  3. Heat vegetable oil in a deep frying pan over medium heat. Once the oil is hot, carefully add the puris and fry until they puff up and turn golden brown. Remove the puris from the oil and place them on a paper towel to drain excess oil.
  4. In a separate pan, heat 1 tablespoon of vegetable oil over medium heat. Add cumin seeds and let them splutter.
  5. Add the chopped onion and sauté until it turns golden brown. Then, add the chopped tomatoes and green chili. Cook until the tomatoes are soft and mushy.
  6. Stir in the turmeric powder, coriander powder, red chili powder, and salt. Cook the mixture for a few minutes until the spices are well incorporated.
  7. Add 1 cup of water and bring the curry to a gentle simmer. Let it cook for 5-7 minutes until the desired consistency is achieved.
  8. Garnish the vegetable curry with fresh coriander leaves and serve hot with the fried puris.
