Ingredients

  • 1 cup urad dal (black lentils)
  • 1/2 inch ginger, finely chopped
  • 2 green chilies, finely chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon asafoetida (hing)
  • Salt to taste
  • Oil for frying
  • 3 cups yogurt
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon red chili powder
  • 2 tablespoons tamarind chutney
  • 2 tablespoons mint-coriander chutney
  • Fresh coriander leaves for garnish

Instructions

  1. Soak the urad dal in water for 4-5 hours, then drain the water and grind it into a smooth paste.
  2. Add ginger, green chilies, cumin seeds, asafoetida, and salt to the dal paste. Mix well.
  3. Heat oil in a deep pan. Wet your hands and take a small portion of the dal mixture, shape it into a small round dumpling, and carefully slide it into the hot oil. Fry until golden brown and crispy. Repeat with the remaining mixture.
  4. Soak the fried dumplings in water for 20-30 minutes, then gently press to remove excess water.
  5. Whisk the yogurt with salt and a little water to make it smooth. Place the dumplings in the yogurt and let them soak for 1-2 hours in the refrigerator.
  6. Before serving, top the dahi vada with roasted cumin powder, red chili powder, tamarind chutney, mint-coriander chutney, and garnish with fresh coriander leaves.
