Fried Noodles Fiesta (炒面嘉年华)

Ingredients

  • 300g fresh noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 carrot, julienned
  • 1 bell pepper, sliced
  • 100g cabbage, shredded
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1/4 cup chicken broth

Instructions

  1. Boil the fresh noodles according to package instructions, then drain and set aside.
  2. Heat the vegetable oil in a wok or large skillet over high heat.
  3. Add the onion and garlic, and stir-fry for 1-2 minutes until fragrant.
  4. Add the carrot, bell pepper, and cabbage, and stir-fry for another 2-3 minutes until the vegetables are tender-crisp.
  5. Push the vegetables to the side of the wok, then add the cooked noodles to the center.
  6. Pour the soy sauce, oyster sauce, sugar, white pepper, and chicken broth over the noodles.
  7. Toss everything together until the noodles are evenly coated with the sauce and the vegetables are mixed in.
  8. Transfer the fried noodles to a serving platter and serve hot.
