Ingredients
- 1 pound okra, sliced
- 1 cup cornmeal
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups tomato sauce
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix the sliced okra with cornmeal, salt, and black pepper until the okra is coated.
- Heat vegetable oil in a pan over medium heat.
- Add the coated okra to the pan and fry until golden and crispy, about 8-10 minutes.
- Remove the fried okra from the pan and set aside.
- In the same pan, sauté the chopped onion and minced garlic until fragrant.
- Pour in the tomato sauce and simmer for 5 minutes.
- Add the fried okra back to the pan and stir to coat with the tomato sauce.
- Remove from heat and serve hot.
