Ingredients
- 3 lbs oxtail, cut into pieces
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 cup vegetable oil
- 2 onions, chopped
- 3 cloves garlic, minced

- 2 tablespoons tomato paste
- 2 tablespoons soy sauce

Instructions
- In a large bowl, mix the flour, 1 teaspoon of salt, and 1 teaspoon of black pepper. Dredge the oxtail pieces in the seasoned flour, shaking off any excess.

- In the same pot, add the chopped onions and minced garlic. Cook until the onions are soft and translucent.
- Return the oxtail to the pot and add the beef broth, bay leaves, thyme, paprika, scotch bonnet pepper (if using), tomato paste, soy sauce, and Worcestershire sauce. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 2.5 to 3 hours, or until the oxtail is tender and the sauce has thickened.
- Remove the bay leaves and scotch bonnet pepper before serving.
