Fried Plantain and Beef Stew (Ragoût de Plantains Frits et de Bœuf)

Ingredients

  • 2 ripe plantains, peeled and sliced
  • 1 lb beef stew meat, cut into cubes
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the beef cubes and brown on all sides, then remove from the pot and set aside.
  3. In the same pot, sauté the onions, garlic, and red bell pepper until softened.
  4. Add the diced tomatoes, tomato paste, thyme, paprika, salt, and pepper. Cook for 5 minutes.
  5. Return the browned beef cubes to the pot and add the beef broth. Bring to a simmer, then cover and cook for 45 minutes.
  6. While the beef is cooking, heat a separate pan over medium heat and fry the sliced plantains until golden brown. Set aside.
  7. Once the beef is tender, add the fried plantains to the stew and simmer for an additional 10 minutes.
  8. Adjust seasoning if needed and serve hot.
