Ingredients
- 2 ripe plantains, peeled and sliced
- 1 cup shredded cheese
- 4 large flour tortillas
- 2 tablespoons vegetable oil
- Salt to taste
Instructions
- Heat the vegetable oil in a skillet over medium heat.
- Add the sliced plantains to the skillet and fry until golden brown, about 3-4 minutes per side. Remove from the skillet and set aside.
- Place a tortilla in the skillet and sprinkle a quarter of the shredded cheese over half of the tortilla.
- Arrange a quarter of the fried plantain slices on top of the cheese.
- Fold the tortilla in half to cover the filling and press down gently.
- Cook for 2-3 minutes on each side, until the tortilla is crispy and the cheese is melted.
- Repeat with the remaining tortillas, cheese, and plantains.
- Slice the quesadillas into wedges and serve hot.
