Fried Plantain And Saltfish Tacos

Ingredients

  • 2 ripe plantains, sliced
  • 1 cup saltfish, boiled and flaked
  • 1 onion, sliced
  • 1 tomato, diced
  • 1 bell pepper, sliced
  • 1/4 cup vegetable oil
  • 8 small flour tortillas
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the sliced plantains and fry until golden brown, then remove and set aside.
  3. In the same skillet, sauté the onion, tomato, and bell pepper until softened.
  4. Add the flaked saltfish to the skillet and cook for 5 minutes.
  5. Warm the tortillas in a separate skillet or in the microwave.
  6. Assemble the tacos by placing a spoonful of the saltfish mixture on each tortilla, then topping with the fried plantains.
  7. Season with salt and pepper to taste.
