Ingredients
- 2 ripe plantains, sliced
- 1 cup saltfish, boiled and flaked
- 1 onion, sliced
- 1 tomato, diced
- 1 bell pepper, sliced
- 1/4 cup vegetable oil
- 8 small flour tortillas
- Salt and pepper to taste
Instructions
- Heat the vegetable oil in a skillet over medium heat.
- Add the sliced plantains and fry until golden brown, then remove and set aside.
- In the same skillet, sauté the onion, tomato, and bell pepper until softened.
- Add the flaked saltfish to the skillet and cook for 5 minutes.
- Warm the tortillas in a separate skillet or in the microwave.
- Assemble the tacos by placing a spoonful of the saltfish mixture on each tortilla, then topping with the fried plantains.
- Season with salt and pepper to taste.
