Ingredients

  • 2 lbs pork belly, cut into 2-inch pieces
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 cup vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup water
  • 1/4 cup vinegar
  • 1/4 cup soy sauce

Instructions

  1. In a bowl, combine the cumin, paprika, garlic powder, and salt. Rub the pork pieces with this mixture and let it marinate for 30 minutes.
  2. In a large pot, heat the vegetable oil over medium heat. Add the marinated pork pieces and cook until browned and crispy, about 10 minutes.
  3. Remove the pork from the pot and set aside. In the same pot, sauté the onion and garlic until softened.
  4. Return the pork to the pot and add water, vinegar, and soy sauce. Simmer for 45 minutes, or until the pork is tender and the liquid has reduced.
  5. Once the liquid has reduced, increase the heat to crisp up the pork, stirring occasionally, for about 10 minutes.
  6. Transfer the chicharrón de chancho to a serving platter and serve hot.
