Fried Pork (chicharrón De Chancho)

Ingredients
- 2 lbs pork belly, cut into 2-inch pieces
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 cup vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup water
- 1/4 cup vinegar
- 1/4 cup soy sauce
Instructions
- In a bowl, combine the cumin, paprika, garlic powder, and salt. Rub the pork pieces with this mixture and let it marinate for 30 minutes.
- In a large pot, heat the vegetable oil over medium heat. Add the marinated pork pieces and cook until browned and crispy, about 10 minutes.
- Remove the pork from the pot and set aside. In the same pot, sauté the onion and garlic until softened.
- Return the pork to the pot and add water, vinegar, and soy sauce. Simmer for 45 minutes, or until the pork is tender and the liquid has reduced.
- Once the liquid has reduced, increase the heat to crisp up the pork, stirring occasionally, for about 10 minutes.
- Transfer the chicharrón de chancho to a serving platter and serve hot.
