Fried Rice (bali Bliss Nasi Goreng)

Ingredients

  • 4 cups cooked white rice
  • 3 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 200g chicken, diced
  • 4 shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon shrimp paste (terasi)
  • 1 teaspoon tamarind paste
  • 1 teaspoon sugar
  • 4 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. Heat the remaining 2 tablespoons of vegetable oil in the same wok.
  4. Sauté the shallots and garlic until fragrant.
  5. Add the diced chicken and cook until no longer pink.
  6. Stir in the mixed vegetables and cook until tender-crisp.
  7. Add the cooked rice to the wok and stir-fry for a few minutes.
  8. In a small bowl, mix together the soy sauce, sweet soy sauce, shrimp paste, tamarind paste, and sugar.
  9. Pour the sauce over the rice and mix well to combine.
  10. Return the scrambled eggs to the wok and toss everything together.
  11. Season with salt and pepper to taste.
  12. Remove from heat and serve the Bali Bliss Nasi Goreng hot.
