Ingredients

  • 3 cups cooked white rice
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sweet soy sauce (kecap manis)
  • 1 teaspoon shrimp paste (terasi)
  • 1 teaspoon chili paste (sambal oelek)
  • 4 tablespoons vegetable oil

Instructions

  1. Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
  3. Heat the remaining 2 tablespoons of vegetable oil in the same wok.
  4. Sauté the chopped onion and minced garlic until fragrant.
  5. Add the mixed vegetables and cook until they are tender-crisp.
  6. Stir in the cooked rice, soy sauce, sweet soy sauce, shrimp paste, and chili paste. Mix well.
  7. Add the scrambled eggs back into the wok and toss everything together until heated through.
  8. Transfer the fried rice to a serving dish and serve hot.
