Ingredients
- 3 cups cooked white rice
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 teaspoon shrimp paste (terasi)
- 1 teaspoon chili paste (sambal oelek)
- 4 tablespoons vegetable oil
Instructions
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining 2 tablespoons of vegetable oil in the same wok.
- Sauté the chopped onion and minced garlic until fragrant.
- Add the mixed vegetables and cook until they are tender-crisp.
- Stir in the cooked rice, soy sauce, sweet soy sauce, shrimp paste, and chili paste. Mix well.
- Add the scrambled eggs back into the wok and toss everything together until heated through.
- Transfer the fried rice to a serving dish and serve hot.
