Ingredients
- 200g rice vermicelli
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 carrot, julienned
- 100g cabbage, shredded
- 100g green beans, cut into 1-inch pieces
- 2 tablespoons soy sauce
- 1 tablespoon chili sauce
- 1 teaspoon curry powder
- Salt and pepper to taste
Instructions
- Soak the rice vermicelli in hot water for 5 minutes, then drain and set aside.
- Heat the vegetable oil in a large wok or skillet over medium heat. Add the minced garlic and sliced onion, and stir-fry until fragrant.
- Add the julienned carrot, shredded cabbage, and green beans to the wok. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Push the vegetables to the side of the wok and add the soaked rice vermicelli to the center. Pour the soy sauce, chili sauce, and curry powder over the vermicelli. Toss everything together until well combined.
- Continue to stir-fry for another 3-4 minutes until the vermicelli is heated through and evenly coated with the sauce.
- Season with salt and pepper to taste. Serve the fried rice vermicelli hot.
