Ingredients
- 2 cups cooked rice
- 1 cup dried anchovies
- 2 eggs, beaten
- 3 cloves garlic, minced
- 1 onion, diced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon ground white pepper
- 2 tablespoons cooking oil
Instructions
- Heat 1 tablespoon of cooking oil in a wok over medium heat. Add the beaten eggs and scramble until cooked. Remove from the wok and set aside.
- Heat the remaining 1 tablespoon of cooking oil in the same wok. Add the minced garlic and diced onion, and sauté until fragrant.
- Add the dried anchovies to the wok and stir-fry until they turn crispy.
- Add the cooked rice to the wok, followed by soy sauce, oyster sauce, sugar, salt, and ground white pepper. Stir-fry the rice and anchovies until well combined.
- Return the scrambled eggs to the wok and toss everything together until heated through.
- Transfer the fried rice with anchovies to a serving dish and serve hot.
