Ingredients

  • 2 cups cooked rice
  • 1 cup diced chicken breast
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
  3. Heat the remaining oil in the same pan, then add the diced chicken. Cook until the chicken is no longer pink.
  4. Stir in the minced garlic and grated ginger, then add the mixed vegetables. Cook until the vegetables are tender-crisp.
  5. Add the cooked rice to the pan, followed by the soy sauce. Stir well to combine all the ingredients.
  6. Finally, add the scrambled eggs back to the pan and mix everything together. Season with salt and pepper to taste.
