Ingredients
- 2 cups cooked rice
- 1 cup diced chicken breast
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
- Heat the remaining oil in the same pan, then add the diced chicken. Cook until the chicken is no longer pink.
- Stir in the minced garlic and grated ginger, then add the mixed vegetables. Cook until the vegetables are tender-crisp.
- Add the cooked rice to the pan, followed by the soy sauce. Stir well to combine all the ingredients.
- Finally, add the scrambled eggs back to the pan and mix everything together. Season with salt and pepper to taste.
